Introducing our easy-to-cook recipe for delectable protein coconut bars – a no-bake delight that will tantalize your taste buds and keep you fueled for hours. With just a handful of ingredients – a scoop of protein powder, 15 oz of dark cooking chocolate, 1 cup of sweetened condensed milk, and 3 cups of coconut flakes – you can create a wholesome snack that's perfect for on-the-go munching.
Let's get cooking:
- In a bowl, mix coconut, protein powder, and sweetened condensed milk until you achieve a thick, sticky consistency. To prevent the mixture from sticking to your hands, make sure to wash your hands but leave them slightly damp.
- Now, using your hands, shape the mixture into neat rectangles and press them firmly to hold their shape. Once all the bars are formed, place them on a baking sheet lined with parchment paper, and pop them in the freezer for about 20 minutes. This step will make dipping them in chocolate a breeze!
- While the bars chill in the freezer, it's time to melt the cooking chocolate. You have two options here – microwave or stovetop. For the microwave, place 2/3 of the chocolate in a microwave-safe bowl and heat it on medium power for 30 seconds. Stir and repeat in 15-second intervals until the chocolate melts completely. Alternatively, you can melt it on the stovetop by placing a heatproof bowl over a small saucepan filled with simmering water. Stir the chocolate on low heat until it's lusciously melted. Now, add the remaining 1/3 of the cooking chocolate and stir until it achieves a glossy texture. Your tempered chocolate is ready to go!
- Retrieve the chilled coconut bars from the freezer, and one by one, dip them into the melted chocolate using two forks or chopsticks. Gently remove each bar from the chocolate using the same forks or chopsticks, allowing the excess chocolate to drip off. Arrange your bounty on the lined baking sheet.
- The grand finale – let the chocolate-covered bars sit for a few hours until the chocolate sets to perfection. The wait time may vary depending on your location and room temperature, so exercise patience!
